The Best Tasting Sweet Potato Pie – Happy Thanksgiving

The holidays are a joyous time for me and my family.   Like most mom’s we cook with love.  For me, I enjoy sharing my skills in the kitchen from the inspiration of my grandmother mixed with my own flare and unique recipes.  

I hope you enjoy! 

Yields 2 pies 

1 teaspoon real vanilla extract 

2 extra large cooked sweet potatoes (diced)1/3 cup softened butter

3 egg yolks 1 cup packed brown sugar

L1/4 teaspoon salt

1 1/2 teaspoon sour cream

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup evaporated milk

1/4 cup white sugar

2 (9 inch) unbaked pie crust

Preheat oven to 400 degrees F (200 degrees C).

Brown Sugar Glaze 

5tablespoons unsalted butter

1/2 cup packed brown sugar

2 tablespoons milk or creme

1 teaspoon pure vanilla extract

In a mixing bowl, combine the sweet potatoes, butter, egg yolks, brown sugar, salt, sour creme, cinnamon, nutmeg and evaporated milk. Mix all  ingredients  well until smooth. 

Beat eggs and add vanilla and add 1/4 cup sugar and fold into sweet potato mixture.

Pour into pie shell and bake at 400 degrees F (200 degrees C) for 10 minutes. Reduce heat and bake at 350 degrees F (175 degrees C) for 30 minutes or until firm.
